vegetable chili recipie (Cathy, 2/19/08 6:41 PM)
1 (28oz) can tomatoes in juice
1(16oz) jar thick n' chunky salsa
1(15oz) can black beans, rinsed and drained
1(10oz) pkg frozen whole kernal corn
1 C halved zucchini slices
1 tsp chili powder
1 (8oz) pkg shreded cheddar cheese, dividedin a large saucepan over medium high heat, combine tomoatoes in juice, salsa, drained black beans, corn, zucchini slices and chili powder. bring to boil. reduce hea to low and let simmer for 10 mins. sprinkle some cheese on the bottom of each serving bowl, top with chili and sprinkle with more cheese. serve hot.
makes 8 servings
ok, that's how it was written, here are my own thoughts. i used medium salsa and more like 1.5 tsp chili powder. i would quarter the zucch slices if i make it again ( and i will) and i will thaw the corn first next time..... BYE!
