The grand plan for the meal, pre-meal, was noted as follows:

Lots of falafel

Salsa, which can go on the falafel

Vegan sushi plus crab meat

How it actually turned out: falafel, which involved throwing unmeasured and uncut chickpeas, chive, baking powder, salt, cumin, and olive oil in a blender.

Dan and Shannon helped make it slightly more like real falafel (I created something of a mush).

Rice, both real sushi rice brought by Brian and Stacey (along with all the key sushi-making tools and ingredients, minus fish!) and regular white rice Manda and I had started earlier.

Tomato sauce, from canned crushed tomatoes, cook long enough, several hours, to start getting good.

People came and saved things, taking over much of the preparation.

NEXT TIME...

For anyone with dietary restrictions (say, severe dietary restrictions) I need to plan out that part of the meal in advance, clear it, be very clear.

I really wouldn't think that eggplant, zucchini, and squash could be too high in carbohydrate (I did research low-carb veggies), but I would need the numbers at the ready to present. To be able to say absolutely "here, you can eat this."
